How do I season my griddle?
Start by cleaning your griddle surface with warm, soapy water and a dish towel to remove any dust or residue. Rinse thoroughly, then heat the griddle on high until the surface changes color—this means it’s ready. Using tongs and a paper towel or cotton cloth, spread 2–3 tablespoons of seasoning oil in a thin, even layer across the surface. The thinner the oil layer, the better it will bond to the metal. As the oil heats, it will smoke, break down, and form a protective, nonstick polymer coating. When the smoking stops, the layer is set. Repeat this process 3–4 times for the initial seasoning. Some sticking may occur during your first few uses—just continue cooking and lightly oiling the surface before and after each session. Over time, the seasoning improves. And since the griddle top is made of steel, you can always resurface and re-season as needed.
What should I do between cooking sessions?
Before each cook, apply a very thin layer of cooking oil to the griddle. After you’re done and the surface is scraped clean, add another thin coat of Blackstone Seasoning & Conditioner—or your preferred cooking oil—and spread it evenly with a paper towel or cloth. This keeps your griddle protected and ready for the next use.

Think of your griddle top like cast iron—it needs special care. Always clean with minimal water, never use soap, and finish with a light layer of oil to protect the seasoning. This keeps your surface in great shape and ready for the next cookout.
